How to brew Kagoshima tea

The key is in the temperature of the water. Find out how to bring out the flavor and brew delicious tea.

1.Take control of the water temperature
The most important thing to consider is the water temperature.
If you remember these differences due to temperature, it can come in handy.
High temperature = Sharp bitterness and strong scent
Low temperature = Smooth sweetness and flavor
2.Change the temperature based on the type of tea
If you are using refined green tea to enjoy flavor and sweetness, brew slowly with water at 50 - 60℃ (2 minutes).
If you are using green tea to enjoy refreshing scent and flavor, brew quickly with water at 70 - 90℃ (1 minute).
3.Get to the last drop
The last drop is packed with flavor. After pouring the first batch, if there’s still water in the pot, the second batch will become bitter. If you get to the last drop, the second batch will taste great too.

Fill up the bowl about 80% with hot water. (70℃ for high quality tea, 90℃ for medium)
The amount of tea for one person is 60ml for high quality and 90ml for medium.

Put the tealeaves in the pot. (10g for 5 people: 2 spoonfuls at home)

Pour hot water and wait about 60 seconds for the tea to ooze out. (30 seconds if you are using deep steam tea)

4.

When poring tea, try to keep it even, avoid shades, and get to the last drop. (Optimal temperature to brew delicious tea: About 50~65℃) On the second batch, wait about 10 seconds after poring in the hot water.

Coarse green tea (Hoji tea・Brown rice tea)

Place the tealeaves in the pot. (15g for 5 people: 2 - 3 spoonfuls at home)

2.

Prepare about 130ml of water per person. Place the tea in the pot and wait for the tea to ooze out.

3.

When pouring the tea keep it even and get to the last drop. (Optimal temperature to brew delicious tea: About 75℃) On the second batch, you can drink it right after pouring in the hot water.

※On the second batch, use hotter water than the first batch. Take a breath and pour it in in separately.
※Almost all of the active ingredients of tea runs out on the second batch, so please replace the tealeaves afterwards.

Refined green tea

Pour tea into the pot and let it cool. (50℃ for high quality tea, 60℃ for medium)

2.

Fill up the bowl about 70% (about 20ml) with hot water. Dispose the left over water. Use a small bowl for refined green tea.

3.

Place the tealeaves into the pot. (10g for 3 people: 2 light spoonfuls at home)

4.

Pour the water in the bowl into the pot and wait about 2 minutes for the tea to ooze out.

5.

When pouring the tea keep it even and get to the last drop. (Optimal temperature to brew delicious tea:About 35 - 40℃) On the second batch wait about 30 seconds after pouring cooled down hot water.
